The Story Behind Our Logo
A logo is often the first impression a restaurant makes. That is why we wanted a design that is not only beautiful but also tells the story of what Waiti Kubuli represents.
Our logo consists of several elements that together weave the narrative of our restaurant. At its heart is the connection to Dominica—the Caribbean island where our chef and co-owner, Sharifa, comes from, and from which Waiti Kubuli takes its original name.
The colour palette is drawn from the Dominican flag, which also features the Sisserou parrot. As the island's national bird, it rightfully earned a prominent place in our logo. The name Waiti Kubuli translates to "Tall is her body", a direct reference to the striking volcanoes that formed Dominica. The island is also famous for its 365 rivers, which are represented in the design. Notably, one river is illustrated more vividly than the others, inspired by the island's famous Boiling Lake.
The chosen aesthetic perfectly reflects who we are: refined enough to represent our fine dining vision, yet warm and accessible enough to radiate the genuine Caribbean hospitality that means so much to us. Just like our restaurant, our logo tells a story—not just of where we come from, but of what we love to share: flavour, culture, and connection.
Caribbean BBQ: More Than Just Grilling
When people think of a Caribbean barbecue, they often imagine grilled meats, tropical flavours, and long evenings outdoors. However, in the Caribbean, a barbecue is far more than a cooking method; it is a cultural cornerstone where family, friends, and food unite.
Across many Caribbean islands, a barbecue is synonymous with community and togetherness. Recipes are passed down through generations, and marinades are often closely guarded secrets. Ingredients such as lime, fresh herbs, chillies, rum, coconut, and vibrant spices create the signature flavour profiles for which Caribbean cuisine is celebrated worldwide.
What makes a Caribbean BBQ truly special is the combination of fire, time, and dedication. Dishes are often slow-cooked over charcoal, wood, or an open fire, developing deep and complex flavours. From grilled fish and lobster to jerk chicken and slow-cooked pork ribs, every island has its own unique specialties.
At Waiti Kubuli, we draw immense inspiration from these traditions. By preparing dishes on our open grill, we introduce our guests to authentic Caribbean flavours, beautifully paired with modern culinary techniques and premium ingredients. Ultimately, a Caribbean barbecue is not just about the food—it is about gathering, sharing stories, and savouring the moment.
Cocktail Pairing: Why We Choose Cocktails
When sitting down for a luxury dinner, many guests automatically opt for a wine pairing. However, cocktail pairing has seen a tremendous rise in popularity over recent years, and for good reason.
While similar in concept to a wine pairing, a cocktail pairing offers even greater versatility to enhance and elevate flavours. Because cocktails are crafted from multiple components, bartenders can align the drink’s profile precisely with the nuances of a dish.
For instance, if a dish features bright citrus accents, we can design a cocktail that amplifies those fresh notes. Conversely, if a dish carries earthy, spicy, or smoky elements, a cocktail can either mirror those rich flavours or create a beautifully balanced contrast.
At Waiti Kubuli, we evaluate several components when crafting our cocktail pairings: freshness and acidity, sweetness, spice, mouthfeel, temperature, and flavour intensity. This results in a cohesive culinary experience where food and drink elevate one another rather than compete.
Given that Caribbean cuisine relies heavily on aromatic spices, tropical fruits, and unexpected flavour combinations, it lends itself beautifully to cocktail pairings. Incorporating premium rums, exotic fruits, fresh herbs, and house-infused syrups, our drinks match the current menu seamlessly.
As a result, more and more of our guests are choosing a cocktail pairing as an alternative to wine—not because it is superior, but because it offers a distinct and often more surprising dimension to the meal. It is also worth noting that the alcohol content is comparable to a traditional wine pairing. Naturally, we also offer fully non-alcoholic mocktail pairings, where we replace the alcohol with premium zero-proof spirits. Our non-alcoholic collection has grown to include three distinct alcohol-free rums, four gins, and various floral and bitter botanical spirits.
Where Do We Find Our Inspiration?
A question we are frequently asked by our guests is: "How do you constantly come up with new dishes and cocktails?" The short answer? From everywhere!
For both chefs and bartenders, inspiration always begins with curiosity. A journey, a conversation, a distinct aroma, a single ingredient, or even a cherished memory can spark the creation of a new dish or cocktail. In professional gastronomy, inspiration is rarely about copying a recipe literally; it is about blending experiences, techniques, and flavours into something entirely original.
At Waiti Kubuli, much of our inspiration is rooted in Caribbean cuisine and culture. Sharifa brings memories, flavours, and traditions directly from Dominica. At the same time, we continuously monitor global developments within modern gastronomy, international cocktail culture, and leading restaurants worldwide.
Seasonal produce also plays a vital role. Sometimes, a new dish begins simply because a certain local ingredient is at its absolute peak. A cocktail might be born because a tropical fruit pairs flawlessly with a specific rum or homemade syrup. To enhance this synergy, we also infuse our own rums, allowing us to create seamless harmonies between our food and drinks.
Our guests, friends, and family are equally influential. Through conversations at the table, we discover which flavours resonate, what memories food evokes, and what our guests are curious to try next.
Perhaps that is the most beautiful aspect of our profession: inspiration is an infinite resource. There is always a new flavour combination to discover, a new technique to master, or a new story to tell. This is precisely why our menu changes every six to eight weeks. Not because we have to, but because creativity never stands still.
